Quinoa Tabouli

About 2 cups cooked quinoa
½ cup lemon juice
1/3 cup olive oil
4-6 small cucumbers, cup into half moons
3 ripe tomatoes, or 1 cup cherry tomatoes, cut small
2 scallions, cut small
½-1 ½ cup fresh mint, chopped fine
½-1 ½ cup fresh Italian flat leaf parsley, chopped fine
salt & pepper to taste
garlic salt (optional)
crumbled feta cheese (optional)

Change quantities to satisfy your own tastes.
