From Noni's notebook

  • 8 cups flour in 8 qt pot
  • 4 1/2 cups of Locatelli, a pecorino romano (full cups)
  • 4 tsp pepper, level
  • 1/2 lb melted butter
  • 1 tbsp Crisco
  • 3 large yeast red (something??) cakes (probably the brand of moist yeast cakes)
  • dissolved in very warm water
  • 10 large eggs, not extra large
  1. Put flour in pot & cheese
  2. mix with hands
  3. add pepper
  4. melt Crisco & butter & let cool (??)

Yeast - bread up with 1 cups water (warm) in bowl

Work with fingers to nothing
