Charlotte’s & Lee’s Chinese Sweet and Sour chicken. Serves 4.

Charlotte made up this recipe after Lee asked for sweet and sour chicken one night! 6-1-10. We should have taken a picture. It was beautiful; though our tastebuds remember the glory!



Veggies
sautee together
1/2 chopped onion
1 stick chopped celery
1 chopped red bell pepper
big handful Shredded carrots
Add medium size can of pineapple chunks, drained (save liquid)


Add spices
1 tablespoon minced garlic
1 teaspoon ground fresh ginger (such as Spice World)
1/4 teaspoon crushed red pepper


Sweet and Sour Sauce (make in separate pot)
1/2 to 1 cup reserved cold pineapple juice
1-2 rounded tablespoons corn starch mixed in cold pineapple juice

Heat gently – and then add
2 tablespoons soy sauce
2 tablespoons red wine vinegar


Chicken
Cut bite sized chunks of chicken
Dredge with egg and flour
Fry in canola oil until light brown.

Put rice on plate. Put chicken on rice
Spoon warmed sautéed vegetables and sweet and sour sauce over rice and chicken


Garnish
Sesame seeds
Chopped scallions
