From Noni's notebook
- 8 cups flour in 8 qt pot
- 4 1/2 cups of Locatelli, a pecorino romano (full cups)
- 4 tsp pepper, level
- 1/2 lb melted butter
- 1 tbsp Crisco
- 3 large yeast red (something??) cakes (probably the brand of moist yeast cakes)
- dissolved in very warm water
- 10 large eggs, not extra large
- Put flour in pot & cheese
- mix with hands
- add pepper
- melt Crisco & butter & let cool (??)
Yeast - bread up with 1 cups water (warm) in bowl
Work with fingers to nothing
put egg in ...
