Set the oven to 425&lt;br /&gt;
&lt;br /&gt;
whisk in a bowl:&lt;br /&gt;
* 1/2 cup milk&lt;br /&gt;
* 1/2 cup flour&lt;br /&gt;
* 1/4 cup sugar&lt;br /&gt;
* 2 eggs&lt;br /&gt;
&lt;br /&gt;
Turn a cast iron pan on medium. Put&lt;br /&gt;
* 2-4 tablespoons butter&lt;br /&gt;
in the pan. Once it has melted, pour the ingredients from the bowl into the cast iron pan in one motion. Turn the pan on high and leave for 60-90 seconds.&lt;br /&gt;
&lt;br /&gt;
Put the pan in the oven and leave for 13 minutes. You&amp;#039;ll know it&amp;#039;s done when the middle has puffed dramatically. Take it out and let sit for 5 minutes. Eat with&lt;br /&gt;
* a touch of strawberry jam or&lt;br /&gt;
* powdered sugar or&lt;br /&gt;
* whatever!&lt;br /&gt;
&lt;br /&gt;
If you double the recipe, it&amp;#039;ll come out different but good nonetheless. You&amp;#039;ll need to leave it in the oven for 14-15 minutes.&lt;/div&gt;</summary>
